Fresh greens, citrus, toasted nuts, and more of our favorite cold-weather ingredients combine in these light, bright winter salads. The Fiambre Salad is a dish whose origin is slightly unknown, as it is believed that this Guatemalan tradition began as families took dozens of little dishes to the cemetery, and over time they got mixed together, resulting in this creation.

Fresh heads of romaine lettuce are split down the middle, grilled until charred and smoky, and then topped with blue cheese and bacon for this satisfying salad. This recipe first appeared in the Saveur December 2012 issue along with Georgia Freedman’s story California Eternal.
